Cascara Tea: Coffee’s Hidden Gem

Cascara, meaning "skin" or "peel" or "husk" in Spanish

Cascara tea, also known as coffee cherry tea or coffee fruit tea, is a beverage made from the dried husks or skins of coffee cherries. When coffee beans are harvested, the outer layer of the fruit, known as the cherry, is typically removed to extract the beans for roasting. However, the cherry husks can be dried and brewed to create a unique and flavorful tea.

Cascara tea has a distinctive taste that is often described as fruity, with notes of dried fruit, cherry, and sometimes floral or honey-like undertones. It is known for its pleasant aroma and mild sweetness. The brewing process is similar to making traditional tea, where the dried cascara is steeped in hot water, allowing the flavors and nutrients to infuse into the liquid.

Apart from its flavor, cascara tea also contains beneficial compounds such as antioxidants, vitamins, and minerals. It is believed to have potential health benefits, including promoting digestion, supporting the immune system, and providing a gentle energy boost due to its natural caffeine content.

Cascara tea has gained popularity in recent years as a unique and sustainable alternative to traditional tea or coffee beverages. It offers a way to reduce waste in the coffee industry by utilizing the discarded coffee cherry husks. Additionally, its distinct flavor profile and health benefits make it an appealing choice for those seeking new and flavorful beverages.

What's unique about Gaia's Cascara tea?

The Cascara tea from Gaia is made from 100% fully-ripe Arabica Catimor coffee cherries. These cherries were handpicked by farmers during the peak of harvest season to ensure its maximum sugar content, hence the subsequent sweetness of the brewed tea. The red coffee fruits were fermented for 24 hours before pulping; then the pulps (“Cascara,” in Spanish) were separated from the seeds (green coffee beans) and sun-dried on raised-drying beds for at least 10 days. This resulted in a unique brew which offers a delightful fusion of fruity flavors, floral notes and honey sweetness.

How To Make Cascara Tea?

Just like a shot of espresso, Cascara tea is an extremely versatile base for any other beverage recipes, hot or cold, alcoholic or non-alcoholic. Below is a couple of great drink recipes that Gaia has tested and loved!

First up, we need to brew this tea so it can be a base for other drinks I’m going to share below. That being said, the brewed Cascara tea, whether you consume it hot or with ice, has delightful intrinsic characteristics all on its own. You can simply enjoy and savor the comforting flavors as well as the subtle fruity undertones of cascara in every sip, without having to do much with it. This quality makes it just like coffee, don’t you think?

 

STEEPING THE TEA

  • 20 grams Cascara tea + 500mL hot water (1:25 ratio)
  • Steep for 15-20 minutes (you can extend the steeping time for stronger flavor); then strain and discard the cascara

CASCARA SPRITZER

Ingredients:

  • 250mL cooled Cascara tea
  • 250mL sparkling water
  • 1 tablespoon (15mL) honey or any sweetener (add more if you like it sweeter)
  • Fresh berries, slices of citrus
  • Ice cubes

Instructions:

  • In a pitcher, combine equal parts of Cascara tea and sparkling water
  • Add honey (or any sweetener), stir well
  • Lightly smash the berries and stir into the mixture
  • Add ice cubes and garnish with citrus slices
  • ENJOY!
